The concept comes from Dan Martello and Taylor Wilde, both former chefs at Good Luck, a well-known Rochester restaurant. Drawing on Martello's Sicilian heritage and the traditions of Italian delis, Wildflour operates as both a casual eatery and a small grocery, occupying the space that previously housed Bay & Goodman Pizza. The shop is open Wednesday through Sunday, 11:30 a.m. to 8:00 p.m.

Wildflour has built its identity around ingredient sourcing and whole-grain pasta production. Approximately 90 percent of the restaurant's produce comes from Squash Blossom Farm in Naples, NY, eggs are sourced from local farms, and canned tomatoes arrive from a small Italian collective by way of the Bronx. The emphasis on heritage grains in the pasta program — einkorn, emmer, and spelt rather than conventional semolina — sets it apart from typical Italian restaurants in the Rochester area.

Wildflour sits along North Winton Road in North Winton Village, a walkable east-side Rochester neighborhood characterized by tree-lined streets and early-twentieth-century homes. The stretch of Winton Road near Blossom Road serves as the neighborhood's commercial corridor, where Wildflour shares the block with other independent shops and eateries, including Balsam Bagels and a Wegmans grocery store. Street parking is available along Winton Road. The El Camino Trail, a paved multi-use path, runs along the neighborhood's eastern edge for those arriving on foot or by bike.
